The reason the original masterpiece we know as "Clerks" was in black and white was because of budget constraints, not for artistic purposes.
See, Kevin had enough money to shoot the flick in color, however the only color cameras he could afford would distort the colors under the flourescent lights at Quick Stop. Everything would have a nice neon green hue to it had the movie been shot with said color cameras.
