I'm sure I'm flubbing this but the way I understood it is that both the camera and the sound have a crystal synch motor that let's them run at exactly the same speed. So when you synch using the clapper/audio cues you don't lose synch after a minute or so. As you tend to get without crystal sync motors because of fluctuations in the camera's actuall speed.
