I too am extremely fond of all of the deleted scenes. I always thought they added much more to all the characters involved.
One night last winter, I used the laserdisc and my editing vcr to make an "extended" version of Amy with all the deleted scenes back in. Once I sat back and watched my finished product, I realized why they were cut. Even though I love Alyssa's love story and the lawyer scene, they slow down the movie. And even though I enjoyed the scenes, I understand that they needed to be cut. Kevin made the right choices and left us with a bunch of extras to appreciate on the laser and dvd.
