It's the gravy days for the theater and having it on a monday is much a much cheaper overhead for Kevin. Not to mention I don't know many theaters that would let you rent out everything they have on thier busiest days.
V-Thon 98 - Jan 5, 1998 (a monday)
Dogma Benifit screening - October 25th, 1999 (a monday)
V-Thon 2000 - October 30,2000 (a monday)
Seeing a pattern here?? The only exception I can recall was the Stash Bash which was March 6, 1999 (a saturday)but of course, that didn't involve a movie theater.
