Soul in the Hole
-Great basketball doc. about street ballers from Brooklyn. As good, if not better than "Hoop Dreams" (which I assume you've already seen)
Hearts of Darkness: A Filmmakers Apocolypse
-Incredible film that rivals the "Kane" doc. as far as documentaries about the making of films.
Paradise Lost 1 & 2
-Both HBO films (which I also assume you've seen) that are perhaps the most horrific images ever captured on film. It's so errie that it doesn't seem real.
Sherman's March
-Hilarious (though somewhat long) film about the filmmakers travels through the south to visit past girlfriends.
Dark Days
-Phenominal!!! (especially if you live in NYC).
That's all I got for now. Oh, and of course, my own doc. "Vibe Nation" about breakdancing. (Sorry, had to plug myself).
