Chasing Amy sprung up after mallrats, as far as I know. I don't think there was an original trilogy. It just... happened.
And there were a lot of movies thought up but never made, Face, Bussing, Clerks 2, Mallrats 2, etc.
But yeah Dogma was planned earlier.
