First of all, make sure you have method actors, period. If he's supposed to be pissed off, smack him (or her) right in the fucking face and see what they do.

If they're supposed to cry, try berating them off camera.

Etc.

It's your job to give them the motivation they need to portray the emotional level of the scene, and if they remain too theatrical, tell them to keep their fucking hands down.
