I'm going there in July this year. I usually go about once a year for the past 12 years.
I suggest staying at the Hard Rock Hotel. It's the coolest casino there (even though it is off the main strip) and has the best pool. Not only are there people our age there - as opposed to the other casinos with senior citizens & kiddies galore, but there is tons of eye candy at their pool (for men & women).
The rooms there are decent, not great. My favorite rooms are at the Barbary Coast. It's a very good size & quality for a good price.
I've stayed at MGM, Excalibur, Monte Carlo, Luxor, Barbary Coast, Bally's, Hard Rock, Flamingo, Imperial Palace, Mirage, & Treasure Island.
Buffetts: For decent food at a decent price, try Luxor's or Excalibur's buffett. But if you really want a good buffett, go to the Rio. They have the best (in my opinion) & have a lot of different foods there...something for everyone.
Shows: Haven't gone to any (unless you consider strip clubs as a show). But there are free shows at some of the casinos outside on the strip. Treasure Island has a pirate battle. Excalibur has a Merlin vs. a dragon moat show. The Mirage has a white tiger exhibit & an erupting volcano show as well.
Misc. to do: The Las Vegas Hilton has the Star Trek Experience (which I still haven't seen). Try the Luxor simulator ride - very cool. The Venetian has a Gondola ride throughout the hotel there. Caesar's Palace Forum shops if you want to spend money. Mandalay Bay has a cool shark exhibit (definitely cool).
