I mean, the casting director and the producer, especially when dealing with people like Stone and Coppola and Kevin [not so much Soderbergh at the time of "Out of Sight", though], aren't going to make the final decision, because the director has to be able to work with the person too. A casting director, yes, would be picking the waiters and such -- though not always, of course ... I doubt that Vincent had to audition for "Hey, are you supposed to be here today?" -- and the producer would certainly have input in it.
