A fuck-ass, I would imagine, is one who would fuck another in the ass. I imagine this mostly pertains to men although I understand that women are doing wonderful things with strap-ons these days.
An ass-fuck, as you put it, could probably be a noun or a verb to describe s a sexual encounter in which anal penetration occured.
