So there was no big "aha! Finally I have you in my clutches once again, feeble Logan! You shall sample MY claws for once!" speech. That's not to say they hadn't fought before. In fact, from Wolverine's scent of Sabretooth, he seems to recognize the scent and identifies it as danger.
As for when he says "who were those guys back there" when talking to Professor X later... he DOES have amnesia.
That said, it's the film. Not the comic book or the animated series.
