Well, if you want to be chronological by when they take place, go:
Temple of Doom, Lost Ark, Last Crusade
But, if you want to watch in order of quality, go:
Lost Ark, Last Crusade, Temple of Doom
Especially if you're likely to fall asleep after the first one; Lost Ark is perfect, Last Crusade is a little slow until Connery shows up, after which it's perfect too. So you could take a nice hour long nap.
Or, actually, you could watch them in the order they were released and get a two hour plus nap. (Lost Ark, Temple of Doom, Last Crusade) Just be sure to wake up when the guy says, "If you are a Scottish nobleman, then I am Mickey Mouse!" 'Cause Connery will be there shortly.
