the fight club 2 disc set has a bunch of extras including 4 commentaries, deleted scenes, net trailers, a few easter eggs. the only thing is: i know fox recently stopped producing certain special edition titles. (fc being one) you never know, though. you might be able to find one or two left!!
the se7en 2 disc set is also pretty jam packed as well. at least 2 commentaries (maybe more), multiple variations on the opening title sequence including soundtrack options, deleted scenes, etc.
jfk has a commentary by stone if you're into all that conspiracy theory shtuff. also has deleted scenes that are pretty interesting.
the swingers special edition has 3 features featuring the making of, life after..., and the culture of... plus 2 commentaries (1 w/ jon favreau & vince vaughan, the other w/ doug liman), deleted scenes, etc..
that's all i can think of right now...i'm at work....
