I'd say start off with Shadows of the Empire, it takes place between Empire and Jedi, its really really good and one of my favorites.
The hit the Thrawn Trilogy, which is:
Heir to the empre
Dark Force Rising
The Last Command
then if you dont mind books that are fast reads, go for the Jedi Academy Books, real short but good.
then read " I, Jedi"
and Tales from jabba's Palace
and last but not least, start on the New Jedi Order series.
There's many many other great ones, but these all come to mind.
