In the original NIGHT, the zombies were created by radiation from a space spy satellite crashing to Earth, tying into 60s fear of war, espionage, and paranoia.
Since all of the films are loose sequels, I believe that they all go with that particular idea.

...is a rumination from the lead character in 'Dawn'. In fact, it's a story his Grandfather, a minister, used to tell him.
Incidentally, that actor played the Preacher who utters the same line in the remake.
