anywho, he only pretended to be drinking, kinda like what Loki did with the joint, just not as obviously. after she was drunk it didn't really matter anymore, he could just sit there and watch her. as for Bethany referring to God as 'She' he could have just thought she was one of those feminist people, since the only person who really claims that God is a woman is Serendipity (hence Metatron's emphasis on 'She' when talking to them in the resturant.)
: I was actually expecting to see Bartleby spitting his beers out surreptitiously. The audience would have seen this but not Bethany (she was too drunk and too into her story to notice). I also thought it was a missed tip-off to Bethany when Bartleby referred to God as a "She" (people don't normally do that or even repeat it back as such if someone else says God is a woman).
