You should do what works best for you. Personally, I write mini character bios which (1) give me a sense of what the character is all about, such as occupation and where he went to school and things like that, and (2) allow for me to better understand the plot. And I do this only for characters I would consider "key." One proviso on bios: Don't get too detailed or you'll have no room for spontaneity in your screenplay.
