Mtthias was chosen to replace Judas. It's right there in the Book of Acts, chapter 1. You'll find the reasons why he was chosen in verses 15 to 22 and how he was chosen in verses 23 to 26.
I'm not Catholic, never even been to a Catholic church, so I don't know what kind of stories Catholics have. Lutherans in my country don't have such stories.
Bible calls every believer a saint. At least Paul calls.
Bible doesn't talk much about what demons are. They are angels who have been thrown down from Heaven for rebellion with their leader Satan and God allows them to bug people until the end of age. So, this kind of makes Loki and Bartleby demons? ;)
